We adore this delightful natural microlot from the inimitable Don Olimpo Ramos, grown at 1,680 masl on his farm, Tres Cruces, in Gaitania, Tolima. While we have partnered with the indigenous Nasa Wes’x community, of which Don Olimpo is the leader, for many years, this marks the first time we are featuring a standalone microlot from his own farm.

Olimpo’s family has cultivated coffee here for over 35 years. Following a landmark 1996 peace agreement establishing the Paez Indigenous Reservation, coffee became a powerful symbol of resilience, development, and peace for the community. Grown naturally under native forest shade, ripe Red Caturra cherries underwent a precise 48-hour fermentation before a meticulous seven-day drying process through a combination of raised beds and drying silos.

Olimpo hopes that when we enjoy this coffee, we remember it represents the culture, tradition, and honest work of indigenous families cultivating the mountains of southern Tolima with deep respect for their land.

Nestled at 1,680 meters above sea level in the rugged mountains of Planadas, Tolima, lies Finca Tres Cruces—a pristine 6-hectare organic coffee farm stewarded by Olimpo Ramos Atillo. A proud member of the indigenous Nasa community within the Gaitania reservation, Olimpo began working the fields alongside his family at just ten years old. Over five decades later, he stands as a pioneering leader in specialty coffee in Tolima, beautifully blending ancestral wisdom with modern post-harvest precision.

Cultivating Peace through Coffee

For the Ramos family, coffee is deeply intertwined with the modern history and healing of their territory. While the family has cultivated coffee at Tres Cruces for over 35 years, the crop took on a profound new meaning following the historic 1996 peace agreement signed between the Nasa indigenous community and local guerrilla forces. Prior to this milestone, the territory had been heavily fractured by armed conflict, which severely hindered agricultural development and isolated farming families from economic opportunities.

With the peace accord came safety, stability, and a collective vision for the future. The community embraced specialty coffee as a cornerstone of resilience, transforming their land into a symbol of progress. As Olimpo notes, the community chose to strengthen coffee cultivation as "a sustainable and productive alternative and as a path toward peace and development in the territory".

Ancestral Ecology: Farming with Nature

Olimpo's agricultural practices are rooted in deep environmental stewardship. This is not organic farming within a commercial framework; coffee agriculture within the Paez Reservation is founded on generational knowledge and a deep connection to natural systems. Olimpo explains that "organic management stems from the culture and respect for the land, seeking to protect the soil, water, and the natural balance of [our] territory".

At Tres Cruces, coffee is grown under a rich canopy of native forest shade, which preserves critical water sources fed by mountain springs. This thriving ecosystem flourishes in volcanic ash soils (Andisols) and serves as a vibrant sanctuary for local wildlife, including native birds like guans, blackbirds, and parakeets. Olimpo rejects chemical inputs entirely, relying solely on organic matter, compost, and earthworm humus for fertility.

A Meticulous Focus on Quality

Olimpo’s dedication to quality shines through in his processing methods. Hand-harvesting only peak-ripeness Red Caturra cherries, the coffee undergoes a controlled 48-hour fermentation before a meticulous, multi-stage drying process: three days of dehydration on raised beds followed by four days in a temperature-regulated silo with interval breaks to ensure perfect stability.

By sharing his first standalone microlot with Dukes, Olimpo hopes to establish transparent, direct relationships that foster fairer trade and continuous farm improvements.
