Oscar Omar Alonzo is a third-generation coffee producer and agronomist from Marcala, Honduras. He began growing coffee at 17 on a small plot inherited from his grandmother, laying the foundations for what would become Finca Cuál Bicicleta.

In 2001, encouraged by his friend and fellow producer Rodolfo Penalba, Oscar began transitioning to organic agriculture. After several challenging years, his dedication to soil health and organic farming brought significant improvements in coffee quality and productivity.

One of three coffees selected from Oscar’s 2026 harvest, this natural Parainema was selectively picked at peak ripeness and carefully dried on the farm. Roasted for espresso, it has a rich, fruit-forward profile of purple grape and blackberry, followed by a lingering jammy finish.

“At Finca Cuál Bicicleta, every cup of coffee represents much more than quality. It represents teamwork, creates jobs and helps bring food to the tables of families in our community. When you choose our coffee, you become part of that impact and help us build a better future for the children and families we serve.”

— Oscar Omar Alonzo

Finca Cuál Bicicleta is a 2.5-hectare farm in El Trapiche, Chinacla, in the department of La Paz. Coffee grows here at 1,550 metres above sea level, with mountain spring water available on the farm and organic fertilisers prepared on site.

Oscar’s work as an agronomist informs a careful approach to soil health, plant nutrition and long-term farm productivity. The transition to organic agriculture was not immediate or easy, but the practices developed through that experience now underpin the way the farm is managed.

Alongside Parainema, Oscar cultivates Pacamara, Gesha, Goiaba, Gallo Satú and Arara. This diversity gives him opportunities to explore the potential of different varieties and develop processing methods suited to each coffee.

Oscar continues to focus on improving quality and consistency while developing more sustainable production practices. He is also working to introduce the farm’s coffees to new markets and build enduring relationships with specialty coffee buyers around the world.

Only cherries at their optimal ripeness were selected. After picking, the cherries were floated so that defective and lower-density fruit could be removed. The selected coffee was then kept in bags for one day, allowing sugars to concentrate before the cherries were moved to the drying area.

Drying took approximately 10 to 12 days, until the coffee reached 11% moisture. During the first three days, the cherries were turned around four times each day. For the remainder of the drying period, they were turned eight times a day to encourage even, controlled drying.

Keeping the fruit around the seed throughout this natural process contributes to the coffee’s concentrated sweetness and fruit character. Roasted for espresso, the result is rich and fruit-forward, with purple grape and blackberry leading into a lingering jammy finish.

Our relationship with the Alonzo family extends beyond Oscar himself. His son, Melvin Alonzo, is also a coffee producer whose work we have featured over the years, continuing the family’s dedication to organic farming and quality. It is a relationship we are proud to continue.
